Growing up on Vancouver’s North Shore, Carmen developed a strong connection with coastal British Columbia. After honing his skills in some of the cities top restaurants, his passion for nature brought him to Vancouver Island to further broaden his knowledge of pacific northwest cuisine. Having also worked alongside our Executive Chef, Terry Pichor for the last four years at a Relais & Chateaux property, this dynamic duo will undoubtedly bring something truly unique to the culinary scene of Vancouver Island.
To further broaden his knowledge of food and other cultures, Carmen travelled to Japan and Italy where he would spend weeks working on farms and other kitchens to learn the techniques of local chefs. Upon his return, Carmen was recognized as the “Le Creuset Rising Star” of the 2013 Hawksworth Young Chef Scholarship, and was a Canadian finalist in the 2016 San Pellegrino Young Chef competition.
