Born and raised in France, Jerome knew early on that he wanted to pursue a career in the culinary arts. He became an Apprentice Pastry Chef and Baker at the age of 15, but his skill and ambition soon resulted in a promotion to Executive Pastry Chef. For over a decade he worked in this capacity at various locations of an international hotel company, plus as a pastry chef instructor at the Pacific Institute of the Culinary Arts (PICA) for three years. He subsequently took on the challenging role of Executive Chef at an Italian restaurant.
Jerome also further expanded his professional portfolio to include winemaking. He continues to be co-winemaker at Vista D’oro Farms & Winery in Langley, BC. For the past 19 years, however, he has been the Manager at Granville Island’s Oyama Sausage Co. In this role he has designed cheese and charcuterie menus for many of Vancouver’s top restaurants.
Jerome still loves cooking, and he frequently donates his time and skill at charity events to help people in need.
