A Manitoba local, Albert Kirby has been in the F&B world for over 20 years, starting at the age of 15 in a local outdoor wedding hall, and currently residing at the Fairmont Empress in Victoria as the General Manager for the new Q Restaurant and the renovated Lobby Lounge.
The Beverage side of ‘Food & Beverage’ has always attracted Albert. Along with Nano-brewing dozens of batches of his own beer at home, and continuing his wine education past the WSET level 3 into his Diploma next year, Albert also has a love for all things ‘spirit’.
The opening Bar Manager and resident Mixologist in 2012 for Daniel Boulud’s d|bar in the Four Seasons Toronto; Albert focused on the local Toronto appreciation for classic cocktails, and successfully pushed GIN as the feature spirit. Fast forward to the Sidecut Modern Steak + Bar in the Four Seasons Whistler, where Albert lead the team to achieve a 4 diamond restaurant rating as their Restaurant General Manager. Recently Mr. Kirby has taken the opportunity to work with the Fairmont Empress, one of Canada’s top premium destination hotels; and is bringing his background to mesh with the fantastic service history and culture already prevalent in the property.
